ProcessTürk →Dairy processing plant
Scalable plant design from milk reception and pasteurisation to cheese, ayran and filling.
ProcessTürk →Official authorities to follow before the project
In a food-plant investment, the technical scope moves forward together with local permits and registrations. The authorities below are the official sources for these processes; current requirements should always be confirmed directly with the authority.
Ministry of Industry and Trade
The official source for industrial policy, industrial investment and the framework for product quality and standardisation.
Official website: mcinet.gov.ma ↗Customs and Indirect Taxes Administration (ADII)
The official source for customs procedures when importing machinery, equipment and packaging materials.
Official website: douane.gov.ma ↗Engineering considerations for food plants in the Maghreb
In the Maghreb, the climate gap between coastal and inland regions, the seasonal flow of agricultural raw materials and bilingual market requirements directly affect equipment selection and layout. These notes summarise the questions to ask at the preliminary design stage.
Seasonal raw materials and campaign production
The supply of raw materials such as tomatoes, olives, citrus and milk fluctuates with harvest and lactation seasons. Process capacity, intermediate storage and cold-room volume are assessed against the busiest day of the campaign, not only the average day, and product changeover and CIP times are taken into account when selecting the line.
Water source and treatment
The hardness, chloride and mineral content of well or mains water determine the treatment steps needed for boiler feed water, the CIP circuit and product water. Having a water analysis at the preliminary design stage clarifies the stainless-steel grade and heat-exchanger selection, while water recovery and CIP optimisation directly affect operating costs.
Labelling, languages and food-safety documentation
In Morocco and Algeria, Arabic information is expected on package labels, and French is widely used in business and technical documentation. This affects the choice of labelling and coding equipment and the language of operator screens and manuals. Halal requirements and international food-safety principles shape the selection of raw materials, additives and cleaning chemicals from the outset; current rules are confirmed with the national authorities.
Coastal humidity and inland heat
Salty, humid coastal air calls for corrosion-resistant materials or coatings on outdoor condensers, cable trays and structural steel. Inland, summer heat and dust make it important to size refrigeration equipment on local climate data, to filter air intakes and to plan maintenance access. Standby power and remote alarms against power interruptions are part of the cold-chain design.
What to prepare before the project starts
For the preliminary technical study to move quickly and accurately, it is enough to have the following information at hand; any missing items are completed together.
- Target product mix and expected daily production capacity.
- Plot or building dimensions, existing layout and loading areas.
- Electrical connection capacity, water source and water analysis data.
- Labelling, packaging and halal requirements of the target market.
- Raw-material source, packaging type and storage temperature ranges.
- Phased investment plan and the targeted commissioning period for the first phase.
- 1Requirement and product mix
- 2Preliminary layout and technical scope
- 3Proposal, manufacturing and delivery plan
- 4Installation, commissioning and training
